My daughter loves quiche so much, we normally buy them from a Patisserie shop near our house. This time I tried to make my own.
I used Donna Hay's basic shortcrust recipe for the base and addapted the filling from different sources.
Here is the recipe I used:
For the base:
145 gr butter chopped
300 gr plain flour
60 ml iced water
To make the base : used the pastry cutter, combine the butter and the flour until the mixture resembles fine bread crumbs, add the water and combine them together. Let it rest for 30 minutes. When ready to use, roll out on a lightly floured surface until 3mm (1/8 in) thick. Place on a baking tray,lined non-stick baking paper over the pastry, fill with pastry weights or uncooked rice or beans. and bake in a preheated 180°C (350°F) oven for 10 minutes. Remove the weights and paper and bake for a further 5 minutes or until the pastry is golden.
Meanwhile make the filling.
2 tsp olive oil
1 onion, finely chopped
smoked beef cut it into thin strips
english spinach leaves (Blanch it in the hot water, squeeze all of the water out and then chop them finely)
4 eggs (whisked lightly)
185 ml cream
125 ml milk
a pinch of salt or to taste
Parmesan cheese
Method:
Heat oil in a frying pan over medium heat. Add onion, cook 8-10 minutes or until soft. Drain on a paper towel. Combine all of the fillings together and spread the filling evenly on to the tart shell. bake again for around 30 minutes or until cooked.
